This weeks recipe comes by request. A man who takes care of his 90 year old mother asked for something he could make in a slow cooker that would be soft enough for his mom to eat. She has to eat softer foods these days. He didn’t want to sacrifice flavor either. I put my mind to work and came up with this wonderful meal. Its something everyone can enjoy and takes less than 30 mins to prepare so it is helpful if you have a busy day but want a great meal for you and your family. In the end it came out delicious and the requester was very happy with it. If you have a request for a recipe you would like to learn please feel free to let us know. Enjoy!
Ingredients
2 Medium Onions
3 Pounds Beef
12 Small Bell Peppers
3 tsp Salt
64oz Beef Broth
3 Cups Water
2 tsp Black Pepper
2 tsp Chopped Garlic
1 1/2 Cup White Rice
Directions
Step 1 – Cut Beef into cubes. (I used an Angus Bottom Round.)

Step 2 – Slice your peppers and onions. Chop your garlic. (I used jarlic)

Step 3 – Put your slow cooker/crock pot on high and add all of your ingredients(except rice) and cover. Let cook for 8 hours.

Step 4 – About a half hour before you are ready to eat add your rice.

Step 5 – Serve and enjoy. I served it when it had a soup like consistency. I loved the broth and wanted it this way but if you’d prefer it with less liquid all you have to do is let it sit for a little bit when you take it off the heat. It will thicken up still from the rice.
