For weeks I have been trying to get this recipe to the spot I wanted it at. Well now I have and I would like to bring it to all of you. Its my Italian take on cheddar biscuits. It has a wonderful garlicky taste with a subtle taste of Pecorino Romano cheese. My family loved them and I hope yours will also.
Ingredients
3 ½ Cups Flour
3 ½ Tbsps. Sugar
¾ tsp Salt
5 tsp Baking Powder
¾ tsp Cream of Tatar
1 Cup COLD Butter
2 Eggs
1 ½ Cup Whole Milk
½ Cup Grated Pecorino Romano Cheese
Buttery Topping
½ Stick Butter
3 Cloves Garlic
¼ Cup Parsley
1 tsp Olive Oil
Preparation
Prep 1 – Using a cheese grater prepare your cold butter. Return to the fridge when done for later. (I assure you that is butter in the photo)

Prep 2 – Heat oven to 450 degrees.
Prep 3 – Place Parchment Paper on a cookie sheet.
Directions
Step 1 – Place your Flour, Sugar, Salt, Baking Powder and Cream of Tatar in a large bowl and mix well. (I used a whisk for this for perfect blending)

Step 2 – Now for the fun part. Using a pastry cutter (see photo) cut your cold butter into the dry mixture till you get pea sized pieces in the mixture. Take your time to make sure it is incorporated well.


Step 3 – Add your Pecorino Romano cheese and mix in well.

Step 4 – Add milk and eggs and mix well. Things will be a little sticky and you can add some more flour while mixing if it’s too sticky and not easy to work with. This is all normal.


Step 5 – Generously flour a surface to and place the dough on it. Add more flour to the top of the dough also. Knead lightly until all is mixed together well. The dough should be smooth at this point.




Step 6 – Roll the dough to about ¾ inch thick and cut into circles with a biscuit cutter or a glass (I used a glass) and place them on the parchment paper on your cookie tray.


Step 7 – Place in the oven and cook for 10 to 15 minutes or until golden brown.
Step 8 – While your biscuits are cooking, get out a small pot and heat up about a teaspoon of olive oil and brown 3 cloves of garlic. Add a ½ stick of butter and melt slowly. This will give your butter a great garlic taste. Do this for around 15 minutes and add about ¼ cup of parsley at the end.





Step 9 – Your biscuits should now be ready to remove from the oven. Take your butter and garlic mixture and with a basting brush coat your biscuits with it while they are still hot and serve.
